St. Patrick’s Day is just around the corner, and personally, my favorite holiday. It is a family tradition to celebrate with corned beef, cabbage, and red potatoes. As a matter of fact, my parents even got married on St. Patrick’s Day. It’s a big deal!
We often find the holidays or whatever we mark as a “big deal’ as a perfect time to celebrate with food and drink. And you know what? That is OK! If we can confine the celebration to one day or even just a few hours in that day, we do not throw off all of the hard work we do every other day. I’ll be honest, I will probably have a nice cold beer to celebrate this day, but I also like to practice mindfulness and moderation with any celebration involving food and drink. I will also sweat it out in The Hot Room on this day! I’ll even be teaching the morning 90-minute class. Come check out my festive outfit!
Here’s a delicious and healthy smoothie packed full of vitamins and minerals, protein, carbs and fats to properly fuel your body. I like to drink this smoothie for breakfast or use as an afternoon snack. The greek yogurt packs a big protein punch (that can be increased by adding a scoop of protein powder), and the spinach is a healthy dose of iron to give you all the energy you need to power through your day.

Laura Burdick’s Green Smoothie
1 cup of coconut water or unsweetened almond milk
2 large handfuls of spinach
1/2 cup of plain Greek 2% yogurt
1/2 cup of frozen banana
1TBS almond butter (or other nut butter on hand)
Instructions: Place all in blender and combine.
